One of my favorite websites on the history of anatomy and anatomical illustration—and one of the inspirations behind my blog—is the National Library of Medicine's Dream Anatomy. It details the progression of anatomical representation from the 1500s to the present. The site itself is very easy to navigate and I suggest you sit down and read it from beginning to end.
